This has no doubt been discussed plenty of times and I know that these particular models have been the centre of at least one such discussion.
But what is accurate enough for you?

For me, accurate enough is a model that is easily recognisable as what it is meant to be representing.
In my games I don’t have actual tanks, people or sandbags, I have models that represent them, and as such they do not need to be especially accurate.

The sandbags below for example would no doubt, in the real world be 2 or 3 layers thick and stacked the other way.
However these models meet my criteria of being easily recognisable as sandbags.
Irregular Miniatures make a straight section of 6mm sandbags that are pretty much as accurate to 1/300th as I think you will find, however they are not easily recognisable as sandbags; even when painted people have thought them dry stone walls.

How much does scale play a factor in this?
At 25mm I would expect the bags to be the ‘correct’ size and stacked more accurately.
At 6mm however I would not, I just want to be able to tell what it is meant to be.

What is accurate enough for you and do you like the game itself more than the modelling side, do you prefer the modelling over the gaming..

What works for you?

Totally agree with you. 6mm scale is too small to try and accurately represent specific details; guns would be too small, differences would be hard to spot and detailing would be to indistinct to model or paint.

Much better to emphasise the important details while still keeping the rough form to convey what object/unit it is supposed to represent. A mistake I've made. Enforce with painting or modelling is to make something that's unique and distinguishable when held 30cm from my face for painting, but is all but impossible to identify when in use on a terrain filled table during play.

I think they look good. I'd buy them.

They look good to me. They are a very clear representation of what you want them to represent.

As you've started, excessive detail, at 6mm scale, is often lost to the observer. This is particularly the case when playing the game, so not staring closely at the item.
Also I think hyper-realism is less important in a game where super-human soldiers in bright blue armour are fighting green skinned aliens firing 'Zzap' guns... and that's one of the more sensible scenarios.

I like these alot. However what I really want is small interlocking sandbag sets where I can make it part of my own fortifications. For instance I have a pile of FW pillboxes I want to make some fortifications from. Sandbags, razorwire, etc. Something generic would be great. I personally think you can shrink the size a bit more and still make them look like sandbags. Color and highlights are just as important as over accentuated details.

For my personal taste the sand bags are a little bit on the big size (i model more than i game), but I would still happily use them.

I have several of these sets already and although i'd prefer slightly smaller sandbags as a personal preference the fact i have got some already says that these are within my limits of acceptance. :)

As with Apoc i'm also more a modeller than gamer so reasonable accuracy in scale is always prefered.

Something I failed to mention:

A while back, when looking at similar items as inspiration, had I seen these I'd have brought yours over anything else I saw. I haven't started the project yet but will definitely buy some if I include sandbag defences. Nice work, beats all competitors.
