I don't know about Alaitoc, but the main benefit of Ulthwe is the SR5. This has huge benefits tactically and also for annoying smug Space Marine players. Oh, another benefit - you get really good at painting huge amounts of guardians.

What, you mean spraying tons of minis black and then adding some white or yellow to the helmets?

Regarding Alaitoc, you could say that a benefit would be that you're not shackled to big, expensive Aspect Hosts. Except that if you want SC (which I always want, at least) you have to take a big, expensive Aspect Troupe, which costs almost as much as a Host but takes up a troupe slot.

Another benefit is that armies operating at that level of cheesiness are all the more fun to dissemble and break, allowing Space Marine players to bathe in the tears of the pansy Eldar generals. I guess that's not a benefit for the Eldar player though...

Have yet to play a Iyanden army, those seem leaps and bounds above anything else though in terms of cheese. At least on paper.

that's the one. Don't forget the shuriken catapults though, for that added level of drudgery.

Thanks for all of the feedback. I think I will plan my purchases so that I do what Glyn and others have suggested: field a specific list or a generic one. I may even consider Saim-Hann (curse you, Glyn!).
