There seems to be people out there making them, but so far I've only come across one company (Exodus Wars) that does warriors/immortals/lords/pariahs, but no luck with almost anything else yet. Where can I find epic miniatures for the other necron choices?

The Dark Realm Miniatures company have a line of models called the Andrayada. There are a few heavy infantry in there that are useful for converting Destroyers. Vulturs and Vangauards can be clipped off at their mid section and attached to a Destroyer like body. This body you can sculpt yourself or use Eldar weapons paltforms, or use DRM Hubries.

40K Necron tomb swarms work fine as Tomb Spiders.

Flayers are a little tricky. I plan making simple conversions to EW Edenite infantry when doing these, and painting them in different colors from the warriors.

Wights are even trickier... se Raiders for tips on conversion. I think one might convert Edenite Assault warriors without too much of a hassle, as you need relatively few figures.

For vehicles, scratch-build or make friends with people on the forums that might give youa hand with them.

Other than that, browse the 6mm Painting section of the board to see some fine examples of Necron goodness.

another one that no one has mentioned anywhere (to my knowledge) is plasmablast miniatures. they have infantry and a destroyer. i have some on order so i can't really comment on how good they look, but the pictures on there sight look great. you can find a link in the 6mm section at the top of the page.
as far as the models mentioned by zombo they are gorgeous and highly recommended.
flayed ones are easy if you use the tip from raiders and get the warmaster minis. one pack and you'll have enough for one formation.
the only thing you should need to scratch build are wraiths, warbarque, c'tans, orb, and abbatoir. everything else you should be able to find.
