My wife is a big Eldar fan but I never play with them so I wasn't really sure what good options for taking down titans are.

Her general strategy for facing titans is avoidance, especially if its a big titan like a Warlord.

I am starting to get strategies for dropping her titans so I was trying to encourage her to start thinking of ways of dropping mine but didn't really know the best way.

What strategys are favoured by other Eldar players?

Falcons are great for stripping shields.

The Eldar have a lot of lance weaponry available to them (the Walkers come to mind immediately).  These are great for adding more BMs ands reducing DC.  Plus they are cheap so you can bring a couple formations and your opponent will be hesitant to waste his shots on them.

Shining Spears are always nice for dealing the death blow on a damaged Titan.  I once took out two Warhounds in a single assault with them - both were destroyed outright.

my main army is Eldar, the way i take on titans is using Falcons (as mosovian said) or Night/Voidspinners for stripping shields (both void and Holo) and then Fire Prisms or Revenant titans to start knocking off DC, but the ultmate Titan kill units are Cobras if you can protect them till they get in range (30cm) they take of D3+1 DC!

Or Warlock titan.  Psy-Lance has TKd3, ignore cover barrage and TKFF attacks.  Strip shields, move in to fire with the titan, then support an assault.
