Hi!
Supplementary purposes? Hmm... (I'm contributing to the Tau CPF development too, so they are complementary to me!)
Anyway, your questions:
The metal Tau capital ships have different configurations based on the Sept which develops that particular weapon load for the ship. Hence, the configuration of the Lar'shi (Hero) class cruiser we have in the list is the Vash'ya configuration, because that particular ship's loadout of 4 Ion Cannon (which for EpicA = 2PPA) was first constructed at the Sept of Vash'ya, while the T'olku configuration, which we're not using in the proper list, replaced the Ion Cannon with more Railguns (which is only useful to the Epic list in the Collectors section, as Railguns = Orbital Bombardment)
The resin Tau ships, on the other hand, have no alternate configurations, as they are not designed to be modular (with the possible exception of the Emissary class, which need not concern us in Epic!), the class name is sufficient.
Gal'leath (no r) is the Tau name for the Explorer class starship, not one of its configurations. The Vash'ya Mark XXIII configuration of the Explorer we use is the one chosen because it has more launch bays - the Bor'kan Mark XXIV variant loses half of its launch bays for a strength 8 missile salvo... which we could add in the Collector's section if you want!
You don't have the Custodian - or the other resin capital ships, for that matter - in that list so far, that's why it would have to be added as a new ship, the specs for the Tau spacecraft for Epic are as follows (the ones with the asterix are not in the standard list and only need to go in the Collector section, as do the BP values, of course!):
Custodian - 3BP, 1PPA, 8 Tracers, 6 Mantas, Slow and Steady Hero (Vash?ya) - 2BP, 2PPA, 6 Tracers, 2 Mantas *Protector - 3BP, 2PPA, 4 Tracers, 1 Manta *Emissary (diplomatic variant) - 2BP, 4 Tracers *Emissary (fleet variant) - 2BP, 4 Tracers, 1PPA *Explorer (Vash?ya) - 3BP, 8 Mantas, Slow and Steady *Explorer (Bor'kan) - 3BP, 8 Tracers, 4 Mantas, Slow and Steady *Merchant (Ke?lshan) - 3BP *Merchant (Dal'yth) - 3BP, 1PPA *Hero (T?olku) - 6BP, 6 Tracers, 2 Mantas
Lithesh War = Damocles Gulf Crusade, the masterclass for the Tau in How The Imperial Navy Works, hence its noted importance.
Fio can be explained in the opening Tau fluff - just put the Tau caste names beside the English translations (Por = Water, Aun = Ethereal etc) - in fact the names are already there to see in the fluff, so you don't need to drop the Fio reference.
Also, it may be useful, not least for the bounty of relevant fluff, to read the following pdf:

Anything I missed?
