Can you list the parts needed and maybe a tutorial?

I would love to do a knight army but as you said, they are insane prices for figures that dont even look halfway good (IMO) but yours are amazing.

Sorry for taking my time.

The tools and material. One badly primed plastic space marine, a 1/8” (32mm) plastic rod, also forgot that you need something choppy, for this one I used an imperial guard chainsword.
Glue, knife and a nippers, since there is rather thick plastic to cut I recommend to use some kind of nippers to avoid to (literary) making a bloody mess of it.

Cut the marine as below. Cutting of the shoulder pads, the upper legs, the head and the arms and gun.

The backpack should be cut so you save the top and the exhaust and the vents-things.

All the pieces to save from the marine. As you can see the chest is more or less just a lump of plastic after all the cutting.

Glue the top of the backpack on the top of the chest. So you get the exhaust upwards.

Glue the shoulder pads on at 90 degree. (The long end).
Cut the back of the head and glue it directly onto the chest.

Use the vent-things from the backpack to cover up the rather messy joint between the chest and the backpacktop. Now let it dry firmly before next step.

Cut two legs from the rod, about one cm, let one edge be diagonal.
I use to try to glue the legs on both the bottom legs and the chest at the same time. Leaving it to dry.

Putting the weapons on the knight, adding a piece of rod to the choppy arm. The hip part is usually not looking so good so I try to cover it with some protective platings. In this case two halves of a 6mm tube. Now it is time to greenstuff the joints and so on.
