So while I was on hiatus, my GS (separate tube style) has been sitting in non-temp controlled garages each part inside its own tube and Ziploc bag. What are the chances it is still useable? last touch December 2010.

I would say the chances are pretty good.
I just used the last of a citadel green stuff bar from early 2000s on a modeling project this spring and it worked as intended. I just had to cut the middle section out - where the blue and light green stuff touch - since that had hardened.

Should be fine I'm still using stuff I bought from GW from years ago and that has not been sealed in anything and it's still good.
