Orks are freaking easy, haha. add rivets and bits and maybe a few spikes, and litteraly anything of almost any size could be used.

Anyway, I'm looking into making a death korps army. their are ALLOT of options for them, but what do you guys think is the best.

In the original rules the Nobles' Bikes were used as Grand Marshal & Staff and of course Nobles as well ... I use the Raider Vehicles for Grand Marshal & Staff. And the Gladius as Nobles for my Khazari War Host ...

I'd like to add the DRM Kraytonian Tanks to the list of tau proxies, I think the Arkalest makes a damn fine hammerhead proxy, and the gerresh/arka would work as a skyray..... with a little fiddling I think you could easily make a devilfish too....

Crimson skies minis are an option, there are plenty of very orky designs there. I've seen some good conversions of Trumpeter 1/300 aircraft too. Orks are easy if you have a passing skill with plasticard, anythink can be ork'd out.
