A dinosaur army is actually fairly easy to Proxy, guys:
WarMaster Lizardmen are your Friends!!

I recommend the more expensive Reptilliad
over the Mounted Guild Bounty Hunter,
but only just slightly, and for a specific reason:

The Bounty Hunter is a -perfect- match for the existing NetEpic unit
'Lethosaur Knight Squadron', as it is slightly smaller than
the GW Exodite 'small dino rider' (which NetEpic terms the 'Raptor Knight')
Since the Lethosaur exists only in NetEpic, it can be ignored in EA...

(...I suppose, under protest...But:
I like the two of them together: Think of the differences between
a standard Jetbike and a Vyper and you'll understand exactly what I mean.
In fact: one could proxy these Dino's in using those exact stats...)

I have a Hard time recommending the WarMaster Cold Ones,
as they would require quite a bit of work to modify (IMO).
The riders are fairly integral to the sculpts,
and scraping them off would be a real pain.

I only include them I because
I'm hoping someone might actually do it....
They would look very good, if done properly!
(..and of course I didn't even mention WM salamanders or guild scouts)

I'll try and get some photos of these potential proxies next to the
original GW exodites, for comparison.
As a general rule, the Warmaster pieces are slightly bigger.
As the trend is towards 'TrueScale', this may actually be a plus to some....

Since Warmaster is 10mm, are those minis too big for Epic? Some Chaos minis seem fine, but I'm unsure about others.

One of the things that's keeping me from trying to proxy an exodite list is that anything much bigger than the unreleased exodite T-rex (aka The King) really ought to be a four-legged plant eater type dino (there is some artwork in the 2nd ed 40k codex showing something along those lines). Otherwise, it loses realism in my mind (sadly, even dinosaur riding space elves have to meet some realistic criteria in my head).

The problem is that there aren't any such dinos available at the right scale. Everybody has lots of raptor and T-rex style stuff, but there is no love for the brontasaurs.

Wouldnt a Brontosaurus have a move of like 5cm with a condition that it stops in any forest or swamp it enters to graze, and runs at first sign of danger?  Well, maybe not run, but grass-eaters probably wouldnt have the best temperment to be fighting mounts?

Of course, as I typed this, I thought, "Oh yea, horses eat grass too!" but even they are skittish in a fight unless specially trained...

Eldar could maybe feasibly control the small raptor like dinosaurs similar to the way we do horses, but for the larger dinosaurs (and probably the smaller ones too IMO) it only really makes sense if you assume their riders are controlling them through some psychic device. All the unreleased Exodite do have little jewelled areas on the heads of each of the beasts which could help with this and it is something I was planning to try to reflect on the other dinosaurs in the army too.

I'm using the Warmaster stegadons in my own Exodite army, dinosaurs did get really huge on earth and millennia of skilled alien breeding could easily make them much bigger (I read some dinosaur articles on new scientist and one on was on the topic of the theoretical upper limit for a creature like a dinosaur and it said it estimated it to be twice or more the size the largest ones we have got to). I'm also planning to hire a professional sculptor to make a brontosaurus like dinosaur with a kind of tower on, like in the single piece of Exodite artwork, which can be cast and shared with all. This will be a while off yet though and I'll coincide it with getting my Exodite army list done, tested and posted up, but it's something I'm definitely keen to do.

I imagine that the big, four-legged exodite dinos would have about the same in-game stats as squigoths and orkeosaurs, give or take.

Big creatures can be quite fast, especially in a fictional setting (see also LotR: Return of the King).
