Currently, the Tau range for Epic is only available from Forge World. However, some units that are in the current army list aren't available as models at all:
Heavy Drones
Great Knarloc
Stingray
Swordfish
Narwhal (Scorpionfish)
Moray
Whiteshark
The Stingray can be represented by the Missile Hammerhead model, possibly with larger missile tubes: Example conversion
Painted:
Stingray: 1 2 3 4
The Swordfish will be a slightly more complex conversion based on a railgun Hammerhead, but at a pinch you could go for a simpler solution more directly based on the Hammerhead. Example conversion
Painted: 1 2 3
The Narwhal (Scorpionfish) is simply an Orca with added missiles: Example conversion
Painted: 1 2 3
The Moray is about the size of the Tau Bombers, and can be very well represented by the BFG Emissary model (as I have done in the example); a Protector would also be a good choice. Example conversion
The Whiteshark also isn't available at the time of writing, but FW is apparently already working on the model - in any event you can check out their 40K model at their homepage.
