Looking at the 40K Tau on GW's site they have Shas'ui for Pathfinders and Stealth suits.
Can anyone tell me what they are?

Basically? Sergeants. In 40K they are an upgrade to a standard troop unit giving a one point leadership rise. They can also take the upgrades like drones. They are effectively already included in the EA lists.
