So I am appealed to the humanness of the empire.
 I was wondering if i could create a large infantry army and still hold the dark forces at bay.

Well I play WFB Empire and can say with some authority that ye it's completely possible to play an all infantry Empire force. In fact I've seen lots of Empire armies without knights (most people hate the models). The biggest strength of the Empire is artillery and the detachment system. I usually take a small detachment of missile troops and militia for ever core unit.

Make sure to take some Archers and upgrade them to Huntsmen. That way they can scout and march block the scarier enemy troops allowing your artillery an extra turn to pummel the enemy.

I always ran them with full command spearman and swordman detachments. Malakai is definitely right about needing cannons too, and then keep some handgunners off to the side, with maybe a full command of greatswords to move into battle with anyone rushing them. I never have used knights with empire, except when I had a combined Bretonnian/Empire army, in which case, only the Brets were Knights. By all means field out an infantry army and let us know how it goes.

I am currently trying to do WFB Warriors of Chaos army but played Empire for many years. I rarely took Knights and my army was based around big blocks of Halberdiers with Handgunner and Swordsmen detachments backed up by Crossbowmen and artillery.  

If you did nt spend much on mgaic items then you could field a lot of guys with scray number of warmachines. Mix of cannons an Volley Guns.
