Maybe bulk it up to 4000, then start on another? That's the target size for most of my Marine armies (the Stone Hearts may get more, but I like them best).
Or wait until the mighty Otter produces some manbull doors and do other guys in the interim.

Leaving aside pushing for my own chapter, I'd recommend doing something new for a while, then expanding the Minotaurs to 4000 points, then going back to the new chapter.
