Anyone know where I can get them in a burnt grass type colour? Healthy green grass is the only colour I've seen them in.

Antenociti's workshop is where I go for materials. But even GW does more types now

They have a good range but don't seem to do the pre-grassed mats that I am looking for? The kind that you can roll out and glue to a gaming board.

This may sound painfully obvious but have you tried spray painting the grass?  Find appropriate browns and tans and dust from a high altitude.  I did this with a rock formation and found it incredibly easy to texture with, even if I didn't know what I was doing.  

I've also spray painted felt mats with a lot of success.  If you start with just a little bit from high up and you don't like it you can always stop.  Give it a whirl!
