In brief, Epic games are best set up with balanced forces. If you take all vehicles then you will have trouble keeping objectives. If you take all infantry you will have trouble capturing objectives. If you dont take AA support your troops will vanish from air strikes. All war engines look great, but you will have a few high-points-cost formations, and that means that your opponent will out-activate you (moving his cheap formations to force you to then take an activation so he can see where you are going).
As a general rule, around 3-4 formations per 1000 points makes a good guide.
The Chaos stuff came at the twilight of Epic (again). So, the plastic troops were released and the GW-thinking was that Imperial units could be used for Chaos in most cases.
If you will not be playing official GW tournaments then there are several alternative minis for the more obscure units.
I dont want to drown you with links, but some boards here that may of particular interest are:
Chaos Development - This is where the chaos lists are generally discussed and changes are made to the official forces.
Epic Minis - There are several threads with inspirational models and pictures here. This includes a few Chaos forces. Try the search feature, just looking for 'chaos' in the thread titles.
Battle Reports - These can be very useful to see what kind of forces other people are using, and how well they work. Be a little careful, as some reports use earlier versions of the force lists, but they are still great for wasting an hour or two!
