Please say in which order of ability the following aircraft should come.
First off interception - how good are they are blowing aircraft out of the sky when attacking/intercepting/flying escort?
This is I think a combination of speed, manoverability, sensors, racial ability and firepower.

Second, how likely when flying something like a bombing mission would they be of getting hits with defensive weapons on attacking planes?
This is I think a factor of firepower and whether or not it can fire defensively in the first place!

Third, how tough is the plane? That is when attacked who would be the first to go down?
This is I think a factor of armour/construction, speed, manoverability and racial ability.

For Example I reckon the Eldar would have the best attack/intercept whatever. No defensive fire - they would simply attack! And finally would be one of the toughest, not on par with a dedicated bomber, but better than any other fighter.

You forgot the Manta Missile Destroyer (and technically the AX-1-0), a crucial part of any Tau planetary incursion - and ideal for an Air War planetary assault scenario.

The SM Landing Craft would suit, also - if you have room for the Ork Landa, it's only fair...

As BFG attack craft go, if Starhawks and Furies are in then Darkstars, Eagles and so forth should be in too. (Perhaps the Darkstar can use the Forgeworld Nightwing model, and if FW do an Epic scale regular or Void Dragon Phoenix, it could be the Eagle...) Plus, Sharks and Dreadclaws are possibilities, for scenarios set in high atmosphere or in space.

Plus, Xisor wil doubtless join in with the Impaler, Slavebringer and other such Dark Eldar nasties!

The manta - it doesn't dogfight or bomb I thought, just hover and shoot?

And I thought the AX-10 is identically armed to the regular Tigershark in reguard to aircombat? So I reckon the stats would be fairly similar. Or has it a different missile fit?

So the above are more BFG ships? What are all the BFG attack craft?

Dark Eldar 'Ordnance':

-Impaler Assault Module(quite similar to the Manta...but an assault module, not a bomber...and better)
-Raven Fighter(yet not a Raptor Fighter though...)
-Razorwing Bomber
-Slavebringer Assault Boat

Note, though, there are also 'torpedo bombers' for most races, and the Orks do use assault boats, just no specific mention of a type. Perhaps the Landa can double as an assault ship in 'droves'.

This is my guess for best to worse

Which is the best interceptor?
That is who is most likely to shoot at somebody else and get a hit? A combination of firepower, speed, manoverability and average pilot skill.

I reckon the following are the best to the worse (each group is a tie).

Now one question is is how to factor in armour - which would win out of a Thunderbolt (heavier armour and guns) and lightning (faster and more manoverable). Say it averages out, or weaken the thunderbolts guns and up its armour?

Eldar Darkstar Interceptor
Eldar Nightwing

Imperial Lightning (Air Superiority Fighter model)
Imperial Thunderbolt (Heavy Fighter model)

Note planes not on here when intercepted would abort, ditch the weapons and dogfight instead (or fly on and hope they don't get hit).

Looking at the size in the Forgeworld catalogue, the Eldar Vampire Raider is alot bigger as the Eldar Phoenix bomber (just look at that price!).

I think they equal out in your criteria.

I think size and armour equate to survivability - rather than offensive or defensive ability.
