Anyone have any tips/tricks with regards to this? I've got two sheets I want to join at a right angle and don't want to show the sheets' edges.

Draw a line in from the edge equal to the thickness of the plasticard a pray to the knife handling gods? Or file it?

Get a 45deg photo mount board cutter (and pray to the knife gods.)

There you go - get a tool - and practice (and pray)

Perhaps you could bevel two pieces of hardwood, sandwich the plasticard between them and then plane, file and sand the item to shape?

I like the wooden jig idea, with two holes and wingnuts i can make a clamp.

I probably wouldn't bevel it unless there was no other option. Instead, make two or three 45/45/90 triangles to hold the pieces and file down any overlap. if you do it right the seam should be invisible.
